What is Sumak?
Sumac comes from the berries of a wild bush that grows in Mediterranean and Middle Eastern areas. It is a tangy spice with a sour lemony quality along with a bit of astringency, just like a little pith from a citrus. Centuries ago, it served as the tart, acidic element in cooking, before Romans introduced lemons in the region.
It doesn’t give only the sour taste to dishes also it adds beautiful deep, purply red color. Given its complementary flavor, sumac can be used to brighten up dry rubs, spice blends like za’atar and dressings.
Sumac is one of our most favorite spices and found in many of our dishes ingredients.
