The secret to Fellah pasta is the olive oil&garlic situation. First cook the garlic in olive oil. And while the garlic slowly caramelizes, add the tomatoes and combine with all garlic olive oil flavor. It’s the KEY to this recipe.

- 2 tbsp olive oil
- 2 tomatoes, peeled and grated
- 2 cloves garlic, minced or grated
- 100 gr baby spinach
- 1/2 teaspoon red pepper flakes
- Black pepper
Heat the olive oil in a small sauce pan on medium heat, add the garlic and pepper flakes in olive oil. And while the garlic slowly caramelizes, add the tomatoes and combine with all garlic olive oil flavor.
Meanwhile, bring a large pot of salted water to a boil. Boil the fellah pasta 8 minutes, reserve 1 cup of the pasta cooking water. Add the reserved pasta cooking water in the sauce, bring to boil and add the spinach. Season to taste with salt and pepper. To the sauce add the pasta and toss until combine.
