Potato Salad with Sumac&Lemon Juice Sauce

It’s the simplest way for a delicious potato salad. You can always add in the recipe more vegetables and herbs. But you should always give a massage with sumac to your onions that gives extra flavor and color to your onions. Also mix sumac with lemon juice separately, this process doubles the sumac flavor.

INGREDIENTS

  • 300 gr potatoes
  • 1 small red onion
  • 1 hand parsley
  • 1tsp sumac
  • Half lemon juice
  • 3 tbsp olive oil
  • Salt

INSTRUCTIONS

Dice your potatoes into cubes. Then add them to a large stockpot and cover with generously-salted cold water and cook them until the potatoes are tender. Drain the potatoes in a colander. Wait until it comes room tempature.

Cut the onions and add half tsp sumac and massage onion slices finely with sumac. It adds onions with its red-purple color.

Meanwhile, whisk together the olive oil, lemon juice and rest of the sumac in a small bowl.

Toss everything gently until evenly combined. Enjoy it!
