This classic green lentil soup recipe is healthy, easy to make, and tastes incredible. It’s vegan, too. If you feel lazy and want to have a full meal in one dish than you need to try this.
You can add to the sauce an onion, some fresh peppers and garlic. It gives more texture to the soup.
- 150 gr green lentils
- 1 hand Turkish egg noodles
- 1/4 tsp cumin
- 2 tbsp butter
- 1 tbsp tomato paste
- 1/4 tsp paprika paste or red pepper flakes (optional)
- 1 tbsp dried mint
Wash the green lentils under the colander until the water is clear. Put the lentils in a large pan and add 1 liter of cold water and add cumin, boil for 20 minutes until the lentils are getting soft.
After green lentils are cooked add the egg noodles and cook for 5/10 minutes.
In the mean time, in a small sauce pan, melt the butter, add the tomato paste and chili pepper, mix often. Just before turning of the heat add dried mint.
Add the sauce in the soup and serve warm.
