Fellah Pasta with Spinach Borani

Spinach Borani is a classic Persian spinach yogurt dip that’s usually served with bread. With a lot of spinach and garlic, this delicious dip is something you don’t want to miss!

And you should definitely try this delicious mezze with our Fellah pasta. It`s a spoonfull happiness.


For Spinach Borani

  • 2 tbsp olive oil
  • 1 small onion
  • 1 cloves garlic, minced or grated
  • 500 gr spinach
  • Salt
  • 1 tbsp pine nuts

For Fellah Pasta

  • 250 gr Fellah pasta
  • 2 tbsp olive oil
  • 1 tbsp tomato paste
  • 1 cloves garlic, minced or grated
  • 1/2 teaspoon red pepper flakes
  • Salt
  • Black pepper


For making Spinach Borani;

Chopped the onion finely, chopped the spinach roughly. Heat the olive oil in a pan over medium heat. Add the chopped onions and stir 2-3 minutes until onions are getting soft then add the chopped spinach and continue to stir, about 4-5 minutes until its color become deep green. Transfer the cooked spinach to a bowl and set a side. In a different bowl mix the yogurt, mince garlic and salt. When the spinach cool down combine with yoghurt sauce.

Place pine nuts in a dry (don’t add oil) frying pan large enough to hold them in a single layer. Turn heat to medium-low and cook until fragrant and golden brown, keeping them moving (stir frequently or constantly). When they’re golden brown, immediately transfer them to a plate to stop the cooking and prevent burning. Add 1 tsp olive oil.

For making Fellah Pasta;

Heat the olive oil in a small sauce pan on medium heat, add the garlic and pepper flakes in olive oil. And while the garlic slowly caramelizes, add the tomatoe paste and combine with all garlic olive oil flavor.

Meanwhile, bring a large pot of salted water to a boil. Boil the fellah pasta until they start rising on the surface of water, around 7 minutes. Reserve 1 cup of the pasta cooking water. Add the reserved pasta cooking water in the sauce, bring to boil and add the spinach. Season to taste with salt and pepper. To the sauce add the pasta and toss until combine.

Put the Spinach Borani in a plate, add the fellah pasta and dress with pine nuts.
